VEGETARIAN FOCACCIA

INGREDIENTS:

  • Focaccia bread
  • Baby Spinach
  • Roasted Capsicum (Jarred)
  • Chargrilled Eggplant (Jarred)
  • Roughly chopped Sundried Tomatoes
  • Roughly chopped Broccoli florets
  • Grated cheese
  • Mitch’s Preserves Tomato Relish

METHOD:

Lightly stir-fry broccoli in olive oil for a few minutes. Roughly chop and add capsicum, sundried tomatoes, and eggplant until heated through.

Cut open your focaccia and add a layer of Mitch’s Preserves Tomato Relish to each side. Add spinach, cheese and stir-fry mix and close focaccia.

Bake focaccia in oven or sandwich press until cheese is melted and bread is golden.
