VEGETARIAN FOCACCIA
INGREDIENTS:
- Focaccia bread
- Baby Spinach
- Roasted Capsicum (Jarred)
- Chargrilled Eggplant (Jarred)
- Roughly chopped Sundried Tomatoes
- Roughly chopped Broccoli florets
- Grated cheese
- Mitch’s Preserves Tomato Relish
METHOD:
Lightly stir-fry broccoli in olive oil for a few minutes. Roughly chop and add capsicum, sundried tomatoes, and eggplant until heated through.
Cut open your focaccia and add a layer of Mitch’s Preserves Tomato Relish to each side. Add spinach, cheese and stir-fry mix and close focaccia.
Bake focaccia in oven or sandwich press until cheese is melted and bread is golden.
