MELTING MOMENTS

INGREDIENTS:

Biscuits:

  • 250g butter, softened
  • 1 1/2 cups plain flour
  • 1/3 cup icing sugar
  • 1/2 cup cornflour

Filling:

  • 60g butter, softened
  • 1/2 cup icing sugar
  • 1 teaspoon grated lemon rind
  • 3 teaspoons lemon juice
  • Any Mitch’s Preserves jam

 

METHOD: Cream butter and sugar until light and  fluffy. Add sifted flours, mix well. Put mixture into piping bag fitted with a  fluted tube. Pipe rosettes onto lightly  greased oven trays. Bake in moderate oven for 10-12 minutes  or until pale golden-brown. Cool on wire  rack.
FILLING: Beat butter until smooth, gradually  add icing sugar. beat until mixture is light  and creamy. Beat in lemon rind and juice.
Add lemon cream to flat surface of one  biscuit and your favourite flavour Mitch's Preserves jam to another biscuit, join them  together and repeat process.
