ANZAC BISCUITS

Anzac Biscuits

- 250g butter, melted

- 75g golden syrup

- 9g bi carb soda

- 65g boiling water

- 190g rolled oats

- 180g desiccated coconut

- 300g plain flour

- 120g castor sugar 

- 4g (pinch) salt

 

Prepare a tray lined with baking paper, preheat oven to 180 degrees.

Place butter, golden syrup and bicarb soda in a bowl - melt in microwave until bicarb is frothy. Add the boiling water to combine.

In a large bowl mix rolled oats, coconut, flour, both sugars and salt. Add the butter mixture and mix together well (mixture will be sticky).

Roll mixture into decent sized ball and slightly squash each one with fingers (not too much, they will spread very easily)

Cook at 180 degrees for 15-20 minutes. Cool on baking rack. Enjoy!
